Mama’s Seven Layer Salad

This layer salad has been around since I was a young newly wed. It still is one of the most loved and requested food items I am asked about and asked to serve.
Salad:
2-3 heads of Romaine lettuce (torn in to bite size pieces)
8 ounces of baby spinach (fresh)
8 whole hard-boiled eggs (chopped)
1 can of sliced black olives
16-24 ounces of good quality bacon, fried and crumbled
4 whole tomatoes (chopped)
1 bunch of green onions (thinly sliced)
8 ounces of cheddar cheese (grated)
1 10 ounce bag of frozen baby peas
salt and pepper to taste
Dressing:
1 cup of real mayonnaise (NOT salad dressing)
1 cup of sour cream
2 Tablespoons of sugar
fresh chopped dill (optional)
In a clear glass bowl, layer the salad ingredients in the order they appear. add half of the dressing mixture over the peas  and the balance on the top. Sprinkle with the dill on top. You can also sprinkle more bacon, cheese and olives on top if you desire.
Cover and refrigerate at least 8 hours before serving.
Toss before serving (if you cannot toss before serving, make 2 layers instead of one)
Serves 12
